Description
In most parts of the world, fish is often the cheapest and most abundant form of animal protein available. Small-scale fisheries play an important role in rural communities by providing this vital source of nutrition. Since fish is a highly perishable commodity, it must be processed rapidly and sufficiently to avoid deterioration. This can be done on a small scale by drying, salting, and fermentation.
